Truffles are precious gifts of rich lands, and one must be informed on the state of the market before any purchase.
There are a few simple benchmarks to take note of in order to make sensible and appropriate decisions:
- be sure that the variety of truffle is of the desired kind, checking that the natural openings haven’t been filled with earth.
- with white truffles ensure that the truffle hasn’t been “sanded” to alter its coloration.
- control the smell of the truffle all over the specimen.
- the degree of maturation.
- the level of hygiene of a specimen
- make sure the specimen hasn’t been tampered with.
